This is a vegetarian omelet with lots of flavor inspired by Italy. Choose organic produce and eggs from hens that have been fed flaxseed as they contain much less omega-6 and more omega-3.
1 tablespoon olive oil
1 small zucchini, sliced
1 large tomato of good quality cut in wedges
1 onion into wedges
1 clove garlic grated
10 black olives, sliced
½ teaspoon fresh rosemary or ¼ teaspoon dried
¼ teaspoon fresh oregano or ½ teaspoon dried
½ teaspoon fresh thyme or ¼ teaspoon dried
½ teaspoon salt
¼ teaspoon pepper
100 g grated Parmesan
Heat a frying pan with the oil. Begin by frying the zucchini. After approximately 5 minutes you can add the rest of the vegetables and seasoning and fry for about 5 minutes more. Beat the eggs lightly and pour over the vegetables. Sprinkle with Parmesan and cook until it’s done.
