Grilled cheese – low carb and gluten free

These grilled cheese sandwiches are perfect as a late night snack, or simply whenever you feel the need for something crisp and cheesy.Grilled cheese – low carb and gluten free

Bread:

4 eggs
1 tablespoon cream
40 g grated Parmesan
1 heaped tablespoon coconut flour
4 tablespoons sesame seeds
1 heaped tablespoon almond flour
2 teaspoons husk fiber
1 tablespoon locust bean gum
1 teaspoon baking powder
1 teaspoon dry oregano
½ clove grated garlic

Filling:

8 big slices of cheese
4 slices smoked ham
1 tablespoon butter

Mix eggs, cream, Parmesan cheese, coconut flour, sesame seeds, almond flour, husk fiber, locust bean gum and baking powder in a blender and mix well. Spread the mixture out on a baking paper in a rectangle approx. 20 x 20 cm. Bake at 160 degrees Celsius for about 12 minutes. Let the bread cool on a rack.

Divide the bread into 4 pieces of 10 x 10 cm. Carefully slice the breads open (horizontally) and fill with cheese and ham, with the cheese on both sides of the ham. Sprinkle a little seasoning, salt, pepper, paprika powder and oregano for example.

Brush a little bit of butter in a grill pan or grill iron and grill the toasts until the cheese is melted and the bread has got a nice crust.Grilled cheese – low carb and gluten free

Curry ketchup:

1 dl ketchup without sugar
½ – 1 teaspoon curry powder

Mix together the ketchup and spice, stir well.

Divide the grilled cheese toasts diagonally and serve with curry ketchup.
