With this recipe you get a delicious, rich chocolate mousse that you can enjoy with a good conscience.
2 organic eggs from linseed fed hens
2 dl cream
200 g stevia chocolate (without sugar)
2 tablespoons tagatose
2 tablespoons cocoa without sugar
Pour some of the cream, approximately half a dl into a pot. Bring to a boil and turn off the heat. Pour in the chopped chocolate and stir around a bit. If the chocolate doesn’t melt, turn on low heat and stir until melted.
Separate the eggs and add a tablespoon tagatose to the egg whites and whip until they are stiff and fluffy. Mix the egg yolks with the rest of the tagatose and whip until it’s pale and has doubled in volume.
Whip the cream. Fold the melted chocolate in with the egg yolks, then half of the egg whites and then half the cream. Fold in the rest of the egg white and the rest of the cream. Add the coco powder and whisk well.
