Baked cod with squash- and tomato salad

This is a light and flavorful dish perfect for summer. What I (almost) love most about it is the beautiful colors of the salad together with the white delicate fish.

Baked cod with squash- and tomato salad

Recipe for 2 persons:

400 g cod back loin
1 tablespoon good quality olive oil
Salt and pepper

3 thin slices lime
3 thin slices lemon

1 tablespoon tagatose
1 pinch of salt
2 dl water

1 squash
½ red onion
5 green olives
5 black olives
2 tomatoes
30 g arugula
1 tablespoon good quality olive oil

I like cooking fish at low temperatures to ensure it doesn’t get overcooked, and stays soft and moist. Preheat the oven to about 150 degrees Celsius. Remove the skin and bones from the cod and transfer to a ovenproof dish. Season the fish with salt, pepper and olive oil. Leave the fish in the oven until it starts excreting white liquid. This takes about 15 minutes; use the time to start with the citrus and salad. When the fish is finished, let it rest for a couple minutes.

Boil the lime and lemon slices in water, tagatose and salt until the white rind is becoming translucent, this takes about 10 minutes.

Cut the squash with a julienne iron or a spiralizer, the tomatoes in small cubes, the red onion to small pieces and the olives in slices. Chop up one of the lime slices and one of the lemon slices. Mix everything in a bowl, toss in the arugula and season with salt, pepper, olive oil and one tablespoon of the citrus syrup.

Place the remaining lime and lemon on top of the fish and serve it together with the salad.Baked cod with squash- and tomato salad
