Melon salad with lime and mint

This melon salad is light and refreshing. Serve it cold on a hot summer day when the melons are at their sweetest.Melon salad with lime and mint

Recipe for 4 persons:

½ cantaloupe
1  honeydew melon
¼ watermelon
1 teaspoon chopped or dry mint
½ lime, juice and zest
1-2 tablespoons tagatose

Mix lime juice, zest, mint and tagatose. Stir until the tagatose is dissolved.

Scrape out the seeds of the honeydew melon and the cantaloupe melon. Using a melon baller, scoop out the fruit into balls, or cut them into pieces.

Pour over the lime mixture and toss the melon balls in the marinade. Melon salad with lime and mint
