Mimosa salad with shrimps and smoked salmon

This salad is really fresh, crisp and tasty. Perfect summer food, either as lunch with a good friend or as a light dinner on a hot day!IMG_6518

Salad:

200 g mixed salad
100 g peeled prawns
100 g smoked salmon cut in strips
2 hard boiled eggs, only the yolks
20 g Parmesan
2 spring onions

Dressing:

3 tablespoons canola oil mayonnaise, recipe here
juice of ¼- ½  lemon
1 fed garlic grated
Salt and pepper

Tear the salad in rough, bite sized pieces and place in a large bowl. Mix the dressing of mayonnaise, garlic and lemon juice. Toss the salad with the dressing. Sprinkle shrimp, smoked salmon, grated egg yolks and Parmesan over the salad and garnish with fresh herbs.IMG_6520© endo(f)pain – 2014 – All rights reserved
