Sugar and gluten free granola with homemade pear flavored buttermilk

Instead of using a lot of sugar and honey in my homemade granola, I use puree of pear. The pear puree has a low GI, it works great as a sweetener and it brings a really nice sent of pear to the granola.Sugar and gluten free granola with homemade pear flavored buttermilk

You can vary with different ingredients, for example use different fruit purees and spices, nuts and seeds, but I recommend to avoid sunflower seeds and pumpkinseeds because of the high content of the omega-6 fatty acid linoleic acid (LA). I will also recommend to avoid the use of too much dried fruits because of the high sugar content.

Granola:

3 dl (1,2 cup) gluten free oats
1 dl (0,4 cup) flaxseeds
1 dl (0,4 cup) sesamyseeds
1 dl (0,4 cup) dry quinoa
1 dl (0,4 cup) coarsely chopped almonds
1 dl (0,4 cup) coarsely chopped walnuts
1 dl (0,4 cup) coarsely chopped Brazil nuts
1 tablespoon virgin coconut oil
2 pears
2 tablespoons tagatose
1 tablespoon water

Preheat the oven to 160 degrees Celsius or 320 degrees Fahrenheit.

Start making the pear puree. Find a small pot, add the water. Peel the pears, cut them up in cubes and add to the pot. When it is starting to boil, turn down the heat and cover with a lid. Leave it for about ten minutes until the pears are soft. Remove form heat. Use a blender and process until puree.

Mix the pear puree with all the other ingredients and spread out the mixture on a large rimmed baking sheet. Sprinkle over the tagatose. Bake for 15 minutes, until the granola is lightly browned. Turn down the heat to 100 degrees Celsius or 210 degrees Fahrenheit and bake for 1,5 hour more. Pear flavored buttermilk:

2 pears
2 tablespoons tagatose
1 tablespoon water
1 liter (4,2 cups) plain buttermilk

Make the pear puree as described for the granola. Let the puree cool and then mix in the buttermilk and tagatose.
