This homemade vanilla “sugar” is really easy to make, and so practical to have ready made whenever you need a little vanilla for a recipe.
1 vanilla pod cut in ½ inch (1 cm) pieces
7 oz. (200 g) tagatose
Add the tagatose and the vanilla pod to a food processor and process for about two minutes, or until the vanilla pod is almost pulverized.
Use a fine masked sieve and sift the vanilla tagatose to separate out bigger pieces of the vanilla pod. Store the vanilla tagatose in an airtight container. If the tagatose solidifies you can put it back in the food processor and pulse for some seconds.
