Time: 5 minutes
Difficulty: easy

1 oz. (30 g) fresh basil leaves
1/2 clove of garlic, roughly chopped
1 tablespoon roasted pine nuts
1/6 cup (35 ml) extra-virgin olive oil
1 teaspoon lemon juice
1 heaped tablespoon freshly grated parmesan

Mix basil, garlic and pine nuts in a small processor. Pulse a few times, then add the oil and pulse just until it looks like pesto. If you want to keep the vibrant green color, be careful not to process too much. Stir in the Parmesan cheese, salt and pepper to taste.
