Chicken Tikka Masala with cauliflower rice, yoghurt sauce, tomato salad and low-carb Nan bread

This is a pretty ordinary recipe for Tikka Masala, but what makes it special is the low-carb Nan breads and the cauliflower rice.Chicken Tikka Masala with cauliflower rice, yoghurt sauce, tomato salad and low-carb Nan bread

Recipe:

Servings: 4
Time: 40 minutes + time for marinating
Difficulty: medium

Nan breads:

1 egg
2 tablespoons melted ghee
2 tablespoons yoghurt
1 clove of garlic, grated
2/3 cup (1,5 dl) almond flour
1 tablespoon baking powder
1 teaspoon locust bean gum
¼ teaspoon salt

For brushing:

1 tablespoon melted ghee
1 clove of garlic
1 teaspoon chopped chili
1 tablespoon coriander

Preheat the oven to 400°F (220° C). Mix all the dry ingredients and the wet ingredients seperatly, then mix them together. Line a large baking sheet with parchment paper and form 4 nan breads. Bake for approximately 15 minutes.

Melt the ghee and stir in the garlic, chili and coriander. Brush the nan breads with the ghee mixture.Chicken Tikka Masala with cauliflower rice, yoghurt sauce, tomato salad and low-carb Nan bread

Chicken:

14 oz. (400 g) organic skin and boneless chicken filets, cubed
3 tablespoons yoghurt
2 cloves of garlic, grated
1 tablespoon grated ginger
1 tablespoon paprika powder
1 tablespoon garam masala
1 teaspoon cumin
1 teaspoon dry coriander
Salt and pepper
1 tablespoon canola oil or ghee

In a large glass or stainless steel bowl, combine the yogurt, garlic, ginger, cumin, coriander, garam masala and paprika. Season with salt and pepper.Add the chicken to the marinade, turn to coat and refrigerate 1-4 hours.

Warm up a cast iron pan. Remove the chicken from the marinade; scrape off as much of the marinade as possible. Season the chicken with salt and pepper. Fry the chicken in a little canola oil or ghee, turning once or twice, until just cooked through and browned in spots.

Sauce:

1 tablespoon ghee or canola oil
1 onion, cut in wedges
1 tomato, cut in wedges
2 cloves of garlic, grated
1 tablespoon grated ginger
½ – 1 chili, finely chopped
1 tablespoon garam masala
1 teaspoon cumin
1 tablespoon paprika powder
1 glass, 14 oz. (400g) of good quality tomatoes
1 teaspoon tagatose
1 ½ cup cream
3,5 oz. (100 g) fresh spinach leaves

In a casserole, heat the oil until shimmering. Add the onion, garlic and ginger and cook over moderate heat, stirring occasionally, until tender and golden. Add the garam masala, cumin and paprika, and cook, stirring, for 1 minute. Add the tomatoes with their juices and the tagatose and season with salt and pepper. Cover partially and cook over moderate heat, stirring occasionally, until the sauce is slightly thickened, about 20 minutes. Add the cream cook over low heat, stir occasionally, until thickened, about 10 minutes longer. Stir in the chicken and spinach, and let it simmer gently until it’s warm through.

Cauliflower rice:

1 normal sized cauliflower, grated
2- 3 tablespoons of water

Warm the grated cauliflower in a pan until it’s cooked, approximately 5 minutes. Add water to prevent it from burning.

Yoghurt sauce:

½ cup yoghurt
1 clove of garlic, grated
½ teaspoon dried mint
1 tablespoon chopped fresh coriander
1 teaspoon chopped green chili
Salt and pepper

In a bowl, stir all the ingredients and serve.

Tomato salad:

2 tomatoes, sliced or diced
1/2 onion, sliced or diced
1 tablespoon of chopped coriander
1 teaspoon of olive oil
salt and pepper

Mix everything in a bowl, and serve together with the chicken Tikka Masala, the cauliflower rice, Nan breads, and yoghurt sauce.
