Salmon Carpaccio

This is a quick and easy recipe for the classic Italian salmon Carpaccio. The mild taste of the salmon works perfectly together with the Italian flavors of basil, Parmesan cheese, lemon, pine nuts and last but not least the olive oil. Salmon Carpaccio


Serves: 2
Time: 10 minutes
Difficulty: Easy

7 oz. (200g) sushi quality skinless salmon filet, thinly sliced
2 tablespoons extra virgin olive oil
2 teaspoons lemon juice
2 tablespoons roasted pine nuts
2 tablespoons crumbled Parmesan cheese
2 leafs of hart salad, torn in small pieces
2 tablespoons homemade pesto, recipe here
Salt and pepper

In a small bowl, combine the lemon juice with the oil. Season the dressing with salt and pepper.

Arrange the salmon slices on two platters. Drizzle with the dressing and scatter the pine nuts, Parmesan, pesto, salad and herbs on top. Let stand for 3 minutes and serve.Salmon Carpaccio
