Cauliflower in Creme Sauce with Chanterelle and Bacon

I love picking mushrooms, and it’s not only because of the marvelous nature and the wonderful smell in the woods. It is the feeling I get when I first see them. It’s pure joy, it feels like winning the lottery.

Yesterday I was so lucky to stumble upon the most beautiful chanterelles on my walk with the dogs, I didn’t even look for them! The result was this fabulous lunch.
Cauliflower in Creme Sauce with Chanterelle and Bacon

Recipe:

Serves: 2
Time: 15 minutes
Difficulty: easy

10 oz. (200 g) chanterelles
1 tablespoon butter
5 oz. (150 g) good quality organic bacon
1 cauliflower
1/3 cup (150 ml) 20 % cream
1 teaspoon Dijon mustard
1 pinch nutmeg
2 tablespoons grated Parmesan
2 tablespoons parsley
Salt and pepper to taste

Cauliflower in Creme Sauce with Chanterelle and BaconSteam the cauliflower, fry the bacon until crispy and cut the chanterelles in smaller pieces and fry in butter. Salt and pepper to taste.

Combine the cream, Dijon mustard, nutmeg, salt and pepper in a saucepan. Warm it up over low heat just until it thickens, and stir in the Parmesan cheese.

Cover the steamed cauliflower with sauce and top with crispy bacon, chanterelles and parsley.

    • Thank you so much!
      I think the most similar mushroom will be the funnel chanterelle, but it is probably just as hard to find. I guess ceps will be a good fit as well, and the more ordinary champignons if you fry them a little extra with butter, salt and pepper, to really bring out the flavor.
