Sausage Hash with Fried Eggs – low carb

Most people use leftovers to make hash, not me. I have found the perfect combination and won’t have it any other way.
Sausage Hash with Fried Eggs - low carb

Recipe:

Serves: 3
Time: 20 minutes
Difficulty: easy

1 bell pepper, diced
1 red onion, diced
½ squash, diced
3 organic grass fed beef sausages, diced
5 oz. (140 g ) organic grass fed beef meat loaf, diced
1 tablespoon chopped parsley
Salt and pepper
3 tablespoons butter
3 organic, linseed eggs

In a large nonstick skillet, heat 1 tablespoon of the butter. Add the onion and bell pepper, and cook over moderately high heat, stirring occasionally, until golden, about 5 minutes.

Add the squash and sausage and season with salt and pepper, add more butter if it’s necessary. Cook over moderately high heat, stirring occasionally until nicely browned, about 5 minutes.

In another nonstick skillet, heat the remaining tablespoon of butter. Crack the eggs into the skillet and fry sunny-side up. Spoon the hash onto plates and top with the eggs. Sprinkle with parsley and serve right away
