Döner Kebab Salad Wraps – low carb and gluten free

There are many varieties of kebabs. In this one I used minced meat to make it really quick and easy to prepare. Few things can beat a homemade kebab; well seasoned meat, crispy salad, cooling dressing – all rolled together inside a soft flatbread.Döner Kebab Salad Wraps - low carb and gluten free

Note: This also makes a great salad, just skip the flatbreads.


1 dl almond flour
4 tablespoons husk fiber
1 teaspoon baking powder
1 tablespoon coconut flour
1,5 dl milk
1 teaspoon salt
2 eggs

Mix all the dry ingredients together in a bowl. Warm the milk to a boil and whisk the eggs. Then quickly mix in the eggs and the hot milk until the dough is smooth.

Divide the dough into four pieces, and place one at a time between two layers of plastic wrap. Use a tortilla press to make the flatbreads. If you don’t have a tortilla press either, you can do like me, use a cutting board and press down until it is round, flat and looks like a tortilla.

Warm a frying pan to medium-high heat, and use a stainless steel straight spatula or a knife to carefully transfer the flatbreads to the pan one at the time. They don’t need much time so pay attention.Döner Kebab Salad Wraps - low carb and gluten freeSalad:

14 oz. (400 g) grass fed minced meat
1 tablespoon garam masala*
1/2 teaspoon salt
1 tablespoon butter
1 pinch of chili powder or flakes

1/2 Chinese cabbage, thinly sliced
1/2 cucumber, diced
1/4 red onion, diced
5 oz. (140 g) sugar free corn

1 cup (2,5 dl) sour creme
1 tablespoon canola mayonnaise
1 tablespoon garam masala
Chili sauce to tase
Salt and pepper

Warm a pan over medium to medium-high heat. Add the minced meat to the pan. Use a wooden spatula to break the meat into several pieces. Sprinkle with salt and the spices and stir occasionally to make sure it’s browning evenly.

Prepare the salad by mixing the Chinese cabbage, cucumber, corn and onion in a bowl.

To make the dressing, mix the sour creme, mayonnaise and seasoning.

Place a handful of the salad on the flatbread, then top with a generous spoon of the meat, and a drizzle of dressing and chili sauce, then fold and serve.
