Homemade Tomato Soup from Heaven

I’ve made this tomato soup loads of times, but today I used my own homegrown tomatoes, and mascarpone instead of cream. What a difference it made! Soup from heaven – I just hope it’s not because I’m blinded by love for my homemade tomatoes…Homemade Tomato Soup from Heaven


Serves: 4
Time: 20 minutes
Difficulty: Easy

1 onion, finely chopped
1 carrot, grated
2 and ½ cup (6 dl) scolded, cored and diced tomatoes
2 tablespoons tomato paste
2 cups good strong beef stock
7 oz. (200 g) mascarpone
Salt and pepper
1 teaspoon tagatose
4 boiled organic linseed eggs

In a large pot, add the tomatoes, tomato paste, carrot, onion and the beef stock. Bring to a boil, and let it simmer for 10 minutes. Use an immersion blender and process until the soup is smooth. Stir in the mascarpone and add tagatose, salt and pepper to taste.

Season with salt and pepper and serve with boiled eggs.Homemade Tomato Soup from Heaven
