Cheese Profiteroles with Funnel Chanterelle and Bacon, low-carb and gluten free

3 organic eggs, yolks and whites separated
1 tablespoon crème fraîche
1 tablespoons almond flour
1 tablespoon coconut flour
1 teaspoon xhantan gum
1 teaspoon baking powder
1/2 clove of garlic, grated
2 tablespoons finely grated parmesan
3,5 oz. (100 g) Comté cheese
1 handfull of funnel chanterelles
1 handfull organic, diced bacon
1 teaspoon parsley, chopped
Salt and pepper

Preheat the oven to 350º F (175 º C).Cheese Profiteroles with Funnel Chanterelle and Bacon, low-carb and gluten free

Warm up the crème fraîche in a small pot and add garlic, bacon, cheese and let it melt together. Remove from heat and whisk in the egg yolks. Stir in the flours, baking powder and xhantan gum.

In a stainless steal bowl wisk the egg whites until stiff. Fold inn the cheese batter.

Use two teaspoons to dollop small bawls of batter to a parchment paper covered baking tray. Bake for 10 – 12 minutes and serve.Cheese Profiteroles with Funnel Chanterelle and Bacon, low-carb and gluten free
