Grilled Veal Chops with mushroom sauce and salad

This dish is really simple, just a piece of meat, a little salad and a sauce. But for a late summer lunch it is perfect. The wonderfully tender veal with the caramelized crust, the flavorful and rich mushroom sauce and the fresh vinaigrette tossed salad. Grilled Veal Chops with mushroom sauce and salad

Time: 20 minutes
Difficulty: Easy

Mushroom sauce:

14 oz. (400 g) mixed mushrooms
2 tablespoons finely chopped shallot
1 tablespoon butter
1 teaspoon red wine vinegar
¼ cup reduced/strong brown veal stock
1 cup cream
Salt and pepper
1 tablespoon chopped parsley

Clean and cut the mushrooms in smaller pieces and cook them for approximately three minutes in a dry pan over medium heat to release some of the moisture. Add the vinegar and cook for one more minute. Add the shallot. Add butter to the pan and stir to cook evenly. When the mushrooms are nicely browned, add the stock and cream and let the sauce simmer until it has reduced and thickened a bit. Salt and pepper to taste.


3,5 oz. (100 g) mixed green salad
1 teaspoon Dijon mustard
2 tablespoons red wine vinegar
3 tablespoons extra virgin olive oil
Salt and pepper

Whisk the Dijon mustard with the vinegar, then slowly pour in the olive oil while you continue to whisk. Add salt and pepper to taste. Drizzle the vinaigrette over the salad and toss.

Veal chops:

4 organic grass fed veal chops
1 knob of butter for the pan
Salt and pepper

Light the grill or heat a grill pan. Season the veal chops with salt and pepper. Grill the chops over high heat or cook them in the grill pan for 3 to 4 minutes. Turn and cook until just done, 3 to 4 minutes longer. If you use a pan, deglaze the pan and pour the juices into the sauce.
