Sweet grape, fig and apple cake, sugar and gluten free

This is originally an apple cake, but by adding the season’s fresh figs and grapes it becomes a little bit more fun; And so beautiful with the caramelized fruits on top.Sweet grape, fig and apple cake, sugar and gluten free

Recipe:

Serves: 9
Time: 10 minutes + 40 minutes baking time
Difficulty: Easy

6 eggs
1/3 cup (80 ml) milk
1/3 cup (80 ml) canola oil
1 tablespoon lemon juice
3 tablespoons tagatose
1/3 cup (80 ml) almond flour
1/3 cup (80 ml) coconut flour
1 teaspoon xanthan gum
2 teaspoons baking powder
1 tablespoon cinnamon
3 ripe figs
7 oz. (200 g) seedless grapes
1 apple
A little cinnamon and tagatose to sprinkle on top
1 fig, 1 handful grapes and a few slices of apple for the top of the cake

Preheat the oven to 320 °F (160°C). Mix all the wet ingredients and dry ingredient in separate bowl, and then whisk the dry ingredients a little at the time into the wet. Cut the apple and figs in smaller pieces, and fold grapes, figs and apple in the batter. Line a cake tin with parchment paper and pour the batter in. Decorate the top with slices of fig, grapes and slices of apple. Sprinkle a little cinnamon and tagatose on top. Bake for 40 minutes, and let cool.
