Cognac soaked Luxury Fall Fruit Cake, no added sugar, gluten- and dairy free

In this fruit cake, fresh fall fruits are oven dried, then soaked in Cognac to make the most moist, soft and flavorful fruit cake. Doing it this way there’s no added sugar, which often is a problem with store bought dried fruit.Cognac soaked Luxury Fruit Cake, no added sugar and gluten free

Recipe:

Serves: 10
Time: 30 minutes + drying 8 hours + baking 40 minutes
Difficulty: medium-easy

Fruit:

3 figs
3,5 (100 g) oz seedless grapes
5 plums
1 handfull blueberries
5 apricots

Preheat the oven to 180° F (80°C). Cut the fruits into smaller pieces and dry in oven first for 3 hours. Take out the blueberries and figs. Continue to dry the apricots and grapes for 4 more hours. Take them out of the oven and mix with the figs and blueberries in a bowl. Pour over 1 tablespoon cognac.Cognac soaked Luxury Fruit Cake, no added sugar and gluten free

Cake:

1 tablespoon grated ginger
1 teaspoon cinnamon
½ teaspoon cardamom
1 teaspoon orange zest
1 tablespoon tagatose
4 organic linseed eggs
2 tablespoons almond flour
2 tablespoons coconut flour
1 teaspoon baking powder
1 teaspoon husk fiber

Preheat the oven to 320° F (160 °C).

Mix all the ingredients in a food processor, then fold in the fruits by hand. Pour the batter into your preferred cake tin holding 1 pint.

Decorate with fruit on top.

Bake for 1 hour, then take it out from the oven and pour over 2-4 tablespoons cognac. Remove from cake tin and let it cool on a wire rack.Cognac soaked Luxury Fruit Cake, no added sugar and gluten free
