Baked apples with honey, yogurt and chopped nuts

A breakfast so good it tastes like dessert, and at the same time healthy. This is a breakfast with only four ingredients: Plain yogurt, apples, nuts and honey. A tasty start to the day that will keep you feeling full throughout the morning.Baked apples, honey, yoghurt and chopped nuts

Recipe:

Serves: 2
Time: 40 minutes
Difficulty: Easy

2 organic apples
1 tablespoon honey or 2 teaspoons tagatose for a lower GI
1 teaspoon butter
1 tablespoon apple juice or water
1 sprinkle of cinnamon
1 cup Greek yogurt
1 tablespoon honey or 2 teaspoons vanilla tagatose for a lower GI
2 tablespoons chopped nuts

Preheat the oven to 360° F (160° C). Cut the apples in two and remove the core with a melon baller. Put the apples in a buttered ovenproof dish, drizzle over honey and sprinkle over the cinnamon. Pour the apple juice or water in the bottom of the pan and bake for 30 minutes, or until the apples are soft and cooked through.

Mix honey and yoghurt.

Serve the apples and the juices from the dish, warm or cold, together with the Greek yogurt and chopped nuts.Baked apples, honey, yoghurt and chopped nuts
