Homemade cheesy corn free Corn dogs with sweet mustard sauce and ketchup – Gluten free and LCHF

Once in a while I get these strong cravings for junk food, and there’s no point even trying to resist. I know myself, and when I’ve first got an idea in my head, there’s no stopping. This happened again yesterday and led to this recipe. It was a first try hit, so good I had to make it again in the evening. Gluten free and LCHF

Recipe:

Servings: 6 corn free corn dogs
Time: 30 minutes
Difficulty: Easy
Nutrition pr. dog: Fat ~50g, Protein 28g, Carbohydrates: 2g, Calories ~500 kcal

Sweet mustard sauce:

3 tablespoons canola mayonnaise
1 teaspoon tagatose
2 teaspoons Dijon mustard
2 tablespoons olive oil
Salt to taste

Stir all ingredients together until a smooth sauce.

Corn free corn dogs:

6 good quality organic bratwursts with cheese*
4 eggs
2 tablespoons crème cheese
1 teaspoon xanthan gum
3 tablespoons almond flour
2 tablespoons coconut flour
2 tablespoons finely grated Parmesan
1 handful grated cheese, for example Gruyère
½ teaspoon pepper
1 teaspoon salt
Canola oil for fryingGluten free and LCHF

Start by warming up the canola oil for frying over medium heat. I used a small skillet, but use whatever you prefer for frying.

In a bowl, mix all the ingredients, except the bratwursts, until a thick batter forms. Insert wooden skewers into the hot dogs and dust them with a little almon flour to make the batter stick.

Lay out a piece of plastic wrap om the kitchen counter and pour over one tablespoon canola oil. Dip the sausage, holding the skewer, into the batter and use a spoon to coat it evenly all over. Them roll it on the greased plastic wrap to make a smooth surface. Repeat this with re rest of the sausages.

Fry the “corn” dogs one at the time, unless you have a large fryer.Gluten free and LCHF

Serve immediately while hot and crispy, with sweet mustard sauce and sugar free ketchup for dipping.
