Taco Casserole with homemade Salsa and Guacamole

This is a recipe for a quick and easy low-carb taco casserole everyone will love, and it almost makes it self. Just add everything to the pan, and while you wait for it to cook you have time to make the sauces. Taco Casserole with homemade Salsa and Guacamole

Recipe:

Serves: 4
Time: 30 minutes
Difficulty: easy

14 oz. (400 g) organic grass fed minced meat
2 teaspoons ground cumin
2 teaspoons paprika powder
½ teaspoon ground coriander
1 clove of garlic, finely grated
1 teaspoon salt
½ teaspoon pepper
1 small box organic and sugar free corn
½ onion, chopped
½ paprika, chopped
½ cauliflower, grated
7 oz. (200 g) grated organic cheese

Preheat the oven to 360° F (180° C). Start by cooking the minced meat in an ovenproof pan. When it is nicely browned, add the seasoning and the vegetables and stir. Top with cheese and put it in the oven for approximately 15 minutes.

Taco sauce:

½ cup (120 ml) water
½ cup plain smooth tomato sauce
1 tablespoon tomato purée
3 tablespoons chopped onion
1 inch (3 cm) of a green mild chili, chopped
½ teaspoon salt
½ teaspoon pepper
½ clove of garlic, finely grated
1 teaspoon lemon juice
2 pinches of cumin
1 pinch paprika powder
1 pinch cayenne pepper
1 pinch coriander powder
1 drop vinegar

Combine all the ingredients in a small pot and warm it up to a boil, let it simmer for five minutes, then let it cool in a cold water bath.

Guacamole:

1 avocado
1 teaspoon lemon or lime juice
1 tablespoon canola mayonnaise
1 pinch of salt
1 pinch pepper
½ clove of garlic, finely grated
1 large pinch of cumin
1 small pinch cayenne powder
1 pinch coriander powder

Scoop the flesh from the avocado into a small blender or food processor. Add the citrus juice and the rest of the ingredients. Pulse a few times until it is combined and transfer to a bowl.
