In this salad, beets are pared with feta cheese and a lemon, dill and horseradish dressing. The fresh and pungent dressing and the salty feta is absolutely a great flavor combo to the sweet beets. Baking the beats does not only give them a good consistency, it also help keeping minerals, vitamins and antioxidants inside.
Time: 1-1/2 hour
3 beets of different colors
½ teaspoon salt
½ teaspoon pepper
1 tablespoon lemon juice
1 handful dill
1 teaspoon fresh finely grated horseradish
2 oz. (60 g) mixed green salad
3,5 oz. (100 g) feta cheese
Preheat the oven to 400°F (200° C).
Wrap the beets in foil and roast until they are tender when pierced with a fork, about 1 hour. Let them cool to room temperature, then peel and slice.
In a small bowl, combine salt, pepper, lemon juice, and finely grated horseradish and slowly add olive oil while whisking to combine. Stir in chopped dill.
