Canelés – gluten free and low carb

These rum and vanilla infused small pastries are a real treat; and so quick and easy to make compared to the traditional Canelés. Serve them at the end of a meal as a petit four together with a nice cup of coffee.Canelés, gluten free and low carb

3 eggs
3 tablespoons fat reduced almond flour
3 tablespoons coconut flour
3 tablespoons tagatesse
1 teaspoon of husk fiber
1 teaspoon xanthan gum
3 tablespoons milk
2 vanilla pods
3 tablespoons melted butter
1 teaspoon baking powder
4 tablespoons rum

Preheat the oven to 320° F (160°C). Whisk the eggs and tagatesse fluffy, then add melted butter, milk and rum. Split the vanilla pods, scrape out the seeds and mix this into the batter. Stir in all the dry ingredients. Butter the molds generously and sprinkle a little tagatesse in the bottom of each of them. Use a piping bag and fill the molds half full. Cook for about 18 minutes, then remove the Canelés from the molds immediately to cool.Canelés, gluten free and low carb
