1 teaspoon ketjap manis
2 tablespoon reduced salt soy sauce
2 tablespoons sesame seeds
1 teaspoon butter
7 – 10,5 oz. (200-300 g) organic salmon filet
1 avocado
3,5 oz. green salad
8 slices star fruit
1 cumquat
2 tablespoons pomegranate gems

Warm up a pan over medium-high heat, add butter. Brush the salmon with ketjap manis and sprinkle with sesame seeds. Cook the salmon quickly, giving a flavorful crust and at the same time the leaving the salmon pink – almost raw inside. Remove the salmon from the pan and add sesame sauce to the pan, reducing it just a bit from the remaining heat.

While the salmon rests, prepare the salad onto plates. Salad, slices of avocado, star fruit, cumquat and pomegranate gems. Top with the salmon and drizzle the slightly reduced soy sauce from the pan on top.
