Galette is an open, rustic pie that can be filled with almost anything. It can be sweet or savory, filled with vegetables, fruit and berries, meat or seafood – anything you want. In this Galette I have chosen heirloom tomatoes, tarragon and goat cheese baked in a cheesy, soft and crispy crust. Ideal any time of day, served warm, room temperature or cold – either way, it’s delicious. Norwegian version:
This is actually a pretty genius dish. The combination of tomato and tarragon is always delicious, and with chévre it’s even better. The meatballs are cooked directly in the dish, this way they get a nice crust on top while the bottom is soft and juicy; and at the same time the meaty flavors are spreading from the meatballs into the noodles and sauce and adds even more flavor to the dish. Shirataki noodles are noodles with a very low […]

This is a rustic northern Italian dish full of flavor. You can’t go wrong with garlic, rosemary and oregano bubbling away in white wine and parmesan. Originally it’s made with potatoes, but in this low-carb version it’s with squash.
I’ve made this tomato soup loads of times, but today I used my own homegrown tomatoes, and mascarpone instead of cream. What a difference it made! Soup from heaven – I just hope it’s not because I’m blinded by love for my homemade tomatoes…

You might think menthe in a omelet sounds a bit strange, I know I did the first time, but I can assure you it is delicious. It has actually become one of my favorite omelets.
